  2. 1/2 cup evaporated milk,
  3. 2 cups shredded cheddar cheese,
  4. 1/4 cup all-purpose flour,
  5. 1 teaspoon smoked paprika,
  6. 1/2 teaspoon garlic powder,
  7. 1/4 teaspoon onion powder,
  8. 1/4 teaspoon cumin,
  9. salt and black pepper to taste.

Instructions

  1. Cube Velveeta cheese and place it in a large bowl. Pour evaporated milk over Velveeta cheese cubes and set aside.
  2. Melt the butter over low heat in a medium-sized pot. Once melted, add flour and constantly whisk until roux forms (3 to 5 minutes). Add paprika, garlic powder, onion powder, cumin, salt, and pepper into the roux. Continue to stir while cooking for one minute.
  3. Turn the heat down on the Velveeta mixture slightly so that you can pour in half of your Velveeta mixture without spilling any Velveeta cubes. Keep stirring all ingredients together until Velveeta melts completely. You might have to turn the heat up slightly to melt Velveeta.
  4. Once Velveeta melts, lower heat and slowly add the Velveeta cheese mixture to your roux while constantly whisking. Continue stirring until the Velveeta cheese mixture is ultimately added to your roux mixture. Then, reduce the heat down to low again and let simmer for 5 minutes or until Velveeta sauce thickens up nicely (whisk occasionally).
  5. Add shredded cheddar cheese into Velveeta sauce and stir everything together until it melts (if needed, you can turn your stovetop up for this step just slightly so that cheese doesn’t clump). Add salt and pepper to taste.
