- 4 chicken breasts, skinned and deboned chicken thighs or chicken legs,
- 1 tablespoon of salt,
- 2 tablespoons of vegetable oil chicken broth to cover the chicken,
- 3 garlic cloves, peeled and minced,
- 1 large onion, peeled and chopped,
- 2 tablespoons of chicken seasoning chicken bouillon powder with chicken seasoning or chicken broth cubes work just as well,
- 1 teaspoon of dried oregano,
- 4 dried red chili pods, stemmed and seeded,
- 1 tablespoon of cumin,
- limes wedges to garnish white onion to garnish fresh cilantro leaves to garnish.
Instructions
- Rinse chicken and pat dry chicken thighs chicken legs with a paper towel. Place chicken in a large pot, add chicken broth to cover the chicken by 1 inch, add salt, garlic, onion, chile pods, seasoning spices, and oregano.
- Bring to a boil over medium heat, then reduce heat until the liquid simmer. Cover and cook for 20 minutes or until the chicken is cooked through.
- Remove chicken from cooking broth. Take chicken out of bones. You can save the cooking broth to use in other recipes.
- It freezes well but if not, discard it after removing the chicken, let cool for 5 minutes, then shred. You can use two forks to pull the meat apart in an even manner, so the chicken is shredded evenly.
